    Dear Sir,

    Thank you for your interesting and informative information. It helps to make people aware of the ever present dangers in our food systems. Might I make one suggestion that you also inform people how to help protect themselves from these dangers? Many pathogens such as E coli and Salmonella are endemic. If we accept this statement the natural solution would be to advise how to correct the situation. The Center for Disease Control has identified five common risk factors responsible for food borne illness which include: 1. Purchasing food from unsafe sources. 2. Failing to cook food adequately. 3. Holding food at improper temperatures. 4. Using contamiminated equipmenst. 5. Poor personal hygiene.
    Cooking foods to proper temperatures can help to overcome most but by all means not all, of the naturally occuring bacteria in food. Can you take this a bit further and tell them that by cooking those E coli tainted burgers to at least 155 degrees that the bacteria is killed?     although this was 1 1/2 years ago, you have many states now processing meat and poultry with prison labor. This is done with training as the excuse. Yet the processed meat sometimes is sold to outside users. This directly competes with legitimate processors that have to operate under USDA regulations and not just spot state inspectors.
